On new health insurance plan, how to actually see a doctor?

I recently started a new job and got a different health insurance plan than I previously had before (UHC instead of Kaiser). I was a sick a little while ago and realized I should probably have a primary care physician. I had also been having some other issues related to fatigue and gaining weight (gained about 50 lbs in the last year) and wanted to get blood work done to see if there is any issue.

I called numerous (probably about 10) different offices, and they all either had some reason they couldn’t see me, or appointment times were ridiculously long (most not until September, one had something available in August). So, how do I see a doctor right now? Nothing feels like an emergency, I just feel something is off and want to get checked out. Is the system really this strained right now?
