Changing insurance companies-if providers continue to bill for services rendered during old coverage, they continue to be paid out by old coverage, correct?

This seems like a very obvious “yes,” but I’m having trouble putting this query into words that help Google answer it for me.

Wife gave birth and is on work insurance. Seems pretty typical to continue getting bills for a while, meantime assuming she drops coverage or changes to a new insurance: new bills coming in for services performed while she was covered by her pervious policy, can continue to be billed to (including appeals if denied) to her old insurance policy that is no longer active, correct?

It might be a bit harder to reach the HR department to reach out to insurance to appeal things, but not insane. First experience with something where bills come in months later and policy has changed.
