Charges when uninsured but billed to insurance

I have a question. I got laid off last month and my insurance got cut off the same date.

I’m not gonna opt for Cobra as im in talks with a new employer.

However, I have bloodwork tomorrow and they have my insurance on file. (I had two prescriptions in the meanwhile too with no issues)

Now, hypothetically, let’s say the insurance claim goes through. Does the insurance reach out to me stating I owe them money or the provider? If the first, will they say I owe them what the “plan paid” after all discounts OR will they charge me what the provider “astronomically” billed them?

I’m paying far less if cash. But if i would only owe what insurance negotiated and paid for me, i have no issues owing to them as i save more.

I’m in the US btw.
