Health insurance premiums are too expensive, can I opt out and pay cash?

(PA) I recently started a new job and the employer health insurance cost is $800/pay ($1600/month) for the family plan. I’ve checked into prices to buy my own plan and prices are about the same. My spouse doesn’t work, so I’m the only option. My employer has no cheaper plans unless I am single ($200/month).

Can I remove my dependents from my insurance and pay cash for their medical needs or am I required to pay for insurance for them just because it’s offered?
