Managing Insurance vs Hospital Bills

About 2 months ago my fiancée got a surgery done. A week later we were in and out of multiple ER’s due to complications. We have bills from multiple hospitals, doctors, ambulances, etc.

Almost everything has been sent through our insurance and we’ve gotten statements showing what we would be billed after coverage. They very clearly state “this is not a bill”. We still owe thousands of dollars after coverage. I have seen so many people say they were able to get their bills reduced by asking for itemized bills (I’m assuming from the providers themselves, not the insurance company). I’m also assuming this is through the Hospitals/Doctors financial department?

What I need some help with is some of the finer details.

*Do we need to wait for the actual paper bills from the care providers to ask for itemized bills?

*Do I need to go through insurance for any of this?

*Is it going to make any payments late if we are waiting for paper bills, or itemized bills?

*Is there anything else we can do to help reduce bills or make sure nothing is missed?

I hate the American healthcare system. Thank you in advanced!
