Need help! May be losing insurance.

I’m in dire need of advice. Last May I went off work with a back injury. Turns out I ended up needing back surgery. It was supposed to be last November but due to covid spikes in our area it ended up getting delayed until 3weeks ago. It is going to be at least 6 months recovery time. I have health insurance through work for my wife and me. I’ve been on my company’s short term disability plan for the past 11 months. My company has a policy that you can only be on short term disability for 365 days and if you can’t return in that time, you will be terminated. Most likely I will be terminated on May 24th. My insurance will continue until May 31st, at which point I will be eligible for cobra that I won’t be able to afford. My wife’s employer offers insurance, and their open enrollment is May 9 through May20th. There is a slight chance that I may be able to keep my job because the covid delays is not my fault, but I was told flat out by HR that that is a very slim chance. So, my question is can we sign up for her insurance even though mine will still be active? My insurance is better than hers so if by the slim chance I get to keep my job we would prefer to stay on mine. If we don’t sign up for hers and I lose my job then I’ll be without, and I can’t afford to go without insurance right now. I don’t pay premiums for mine, but wife says she does. Anyway, if we sign on for hers and I get to keep my job is that legal to be on two different plans? I’m not sure if you can cancel plans or not. I’m really in a pickle and I don’t know what the right thing to do is. Thank you for taking time out of your day to read this and thank you in advance for any advice you may have for me.
